煎蛋免治牛肉飯 Minced Beef with Rice

這個港式的免治牛肉飯是我媽媽的版本,家裡的小孩們都非常喜歡(包括小時後和長大以後的我),簡單易做,你快來學學!

This HK-Style Minced Beef Rice Dish is a classic dish from my mom. All the kids (including ME!) love it. It’s very simple and easy to make.

材料 INGREDIENTS

❑ 牛肉餡 120克;Ground Beef, 120g

❑ 雞蛋1隻;Egg, 1

❑ 青豆小半碗;Pea, half of a small bowl

❑ 米飯一碗;Rice, 1 bowl

蠔油醬汁 INGREDIENTS FOR THE OYSTER SAUCE

❑ 蠔油2/3湯匙;Oyster sauce, 2/3 tbsp

❑ 老抽、糖、生粉、水各適量;Dark soy sauce, sugar, cornstarch, water, a little of each


做法 DIRECTIONS

  1. 先煮米飯;First cook the rice1
  2. 牛肉餡先用醬油、糖、生粉、米酒醃製以下(至少15分鐘);Marinate the ground beef with soy sauce, sugar, cornstarch and rice wine for at least 15 mins
  3. 把調味醬汁調好;Mix the ingredients for the sauce
  4. 煎蛋至你喜歡的成熟度;Pan fry the egg in the style you like
  5. 燒熱鍋,加少許油,先把牛肉炒熟;Heat up the pan. Add a little of oil. Add the beef and stir fry until it’s cooked.
  6. 加入青豆,略炒;Add peas and continue to stir fry.
  7. 關至小火,加入蠔油醬汁,煮至濃稠;Turn the heat to low. Add the oyster sauce. Cook until the sauce is thicken.
  8. 在米飯上淋上醬汁,加上煎蛋即可;Pour the beef sauce on top of the rice. Add the pan fried egg. Serve warm.
