Out of all traditional HK style Lo Mein, this HK Style Zha Jiang Noodles is my favorite. It’s a little spicy, sweet and sour. It’s actually pretty easy to make at home. You can get it done by 30 mins! It’s very suitable for those who are now WFH.

材料 INGREDIENTS:
❑ 豬肉絲100克;100g Pork Shoulder, shredded
❑ 麵餅1個;1 Set of Noodles
調味料 SEASONING:
❑ 生抽一湯匙;1 Tbsp of Soy Sauce
❑ 少許糖;Small pinch of sugar
❑ 米酒一茶匙;1 Tsp of Rice Wine
❑ 麻油半茶匙;1/2 Tsp of Sesame Oil
❑ 粟粉一茶匙;1 Tsp of Cornstarch
醬汁 SAUCE:
❑ 水100毫升;100ml of Water
❑ 豆瓣醬兩湯匙;2 Tbsp of Chili Bean Sauce
❑ 茄汁兩湯匙;2 Tbsp of Ketchup
❑ 米醋半湯匙;1/2 Tbsp of Rice Vinegar
❑ 糖一湯匙;1 Tbsp of Sugar
❑ 茄膏半湯匙;1/2 Tbsp of Tomato Paste
❑ 鹽少許;Small pinch of salt
❑ 辣椒油半茶匙;1/2 Tsp of Chili Oil
做法 DIRECTIONS:
- 豬肉切絲後,先用調味料醃15-20分鐘;Cut pork into shreds and marinate with all seasonings for 15-20 mins
- 燒開水,將麵餅煮熟,盛起備用;Boil water and cook the noodles. Set aside
- 醬汁調味料拌勻;Mix well all seasonings for the sauce
- 中火燒熱油,下豬肉絲炒熟;Heat up pan with some oil in medium. Add pork and stir fry until cooked
- 加入醬汁,慢慢煮至濃稠,有需要可叫少許粟粉水勾芡;Add sauce. Cook in medium heat until the sauce is thicken. Use cornstarch to thicken the sauce if needed
- 淋上醬汁即可;Pour the sauce over the noodles. Serve warm
