Oxtail is a cut of meat from the tail of a cow. While it may be tough, it’s incredibly flavorful. When slow-cooked, oxtail becomes tender and falls off the bone. The red wine adds depth of flavor, while the vegetables provide sweetness.

牛尾,顧名思義就是牛的尾巴,肉質本身比較硬但肉味濃郁,經過長時間慢煮,牛尾會變得軟爛,紅酒醬汁使味道更濃郁,蔬菜讓醬汁增加甜度。

材料 INGREDIENTS

  • 2.5 pounds oxtail, cut into pieces 牛尾2.5磅,切塊
  • 1 tablespoon olive oil 橄欖油1湯匙
  • 1 onion, cut into pieces 洋蔥1個,切塊
  • 2 carrots, cut into pieces 胡蘿蔔兩條,切塊
  • 2-3 potatoes, cut into pieces 土豆2-3個,切塊
  • 2 tablespoons minced garlic 蒜蓉2湯匙
  • 1 can diced tomato 切粒番茄1罐
  • 1.5 tablespoon tomato paste 番茄膏1.5湯匙
  • 185ml red wine 紅酒185毫升
  • 1 cup chicken/beef broth 雞/牛肉湯1杯

做法 DIRECTIONS

  1. Blanch the oxtail in advance to remove the dirt and blood. 牛尾先川燙過,去除掉髒東西和血。
  2. Heat the olive oil in a pressure cooker over medium heat. 高壓鍋中火燒熱油。
  3. Add the onion and stir fry until flavor comes out. Set aside. 加入洋蔥,翻炒幾分鐘至有香氣,備用。
  4. Add the oxtail and cook until browned on all sides. 加入牛尾,把牛尾煎香。
  5. Add the minced garlic and stir fry until flavor comes out. 加入蒜蓉,翻炒至有香氣。
  6. Add the red wine and cook until all alcohol is evaporated. 加入紅酒,煮至酒精完全揮發。
  7. Add the diced tomato, broth, tomato paste and 1/4 onion. Close the lid and seal the pressure valve. 加入番茄、高湯、番茄膏和1/4的洋蔥,拌勻,蓋上高壓鍋鍋蓋。
  8. Cook on high pressure for 30 minutes. Let the pressure release naturally for 10 minutes, then quick release any remaining pressure. Check if the oxtail is tender or not. If not, cook in high pressure for slightly longer until it’s tender. 煮30分鐘,讓高壓鍋自然排氣10分鐘,然後快速排氣,檢查牛尾是否已經煮至合適的軟爛程度,如果還不夠軟,再用高壓煮一會兒直至軟爛程度合適。
  9. Add carrots and potato after the oxtail is tender. Cover the lid and cook for 10 minutes. 加入胡蘿蔔和土豆,拌勻,蓋上普通鍋蓋煮10分鐘
  10. Add the remaining onion and cook for another 10-15 minutes until the vegetables are softened. 加上剩餘的洋蔥,再蓋上普通鍋蓋煮10-15分鐘直到所有蔬菜都煮軟。
  11. Taste and season with salt and black pepper. 加鹽和黑胡椒調味。
  12. Thicken the sauce with cornstarch (optional) 可加生粉水勾芡(可選)
  13. Serve hot. 完成,趁熱上桌。

  • If you don’t own a pressure cooker, you can still achieve tender oxtail by slow-cooking it in a Dutch oven on the stovetop for 3-4 hours. 沒有高壓鍋也能做出美味牛尾, 使用荷蘭烤鍋以小火慢炖3-4小時,直到肉質軟嫩。
